Crawfish and Rice Fiesta

2 tbs vegetable oil
2 tbs all-purpose flour
1 large onion, chopped
1/3 tsp garlic juice
1/4 cup green pepper, chopped
1 can Rotel tomatoes, chopped
1 cup water
1 tsp salt
1 tsp Accent
2 cups crawfish
One 10-3/4 oz can cream of mushroom soup
1/4 cup green onion tops, chopped
2 tbs chopped parsley
3 cups cooked rice
Red pepper to taste

In an electric skillet, combine oil and flour. Set skillet to 325F and lightly brown flour and oil. When brown, add onion, garlic juice, green peppers, tomatoes, water and seasonings. Heat to boiling; simmer for 5 minutes, stirring occasionally. Add crawfish, cream of mushroom soup, onion tops and parsley. Cook 5 minutes. Add cooked rice, stir well and remove from heat. Serve hot.

Shrimp may be substituted for crawfish.
