Crawfish Fettuccine 10

1-1/2 cup margarine
3 med onions, chopped
1/4 cup all purpose flour
4 tbs parsley flakes
3 lb crawfish tails
1 pint half and half cream
1 lb Velveeta cheese, cut in small pieces
1 tsp jalapeno peppers, chopped
2 cloves garlic, minced
Salt, red pepper, black pepper to taste
Parmesan cheese
1 lb fettuccine noodles, cooked

Melt margarine in large saucepan. Add onions, bell peppers and garlic. Saute until tender. Add flour and stir. Cover and cook 15 minutes. Add crawfish and parsley. Cook covered 15 minutes stirring frequently. Add cream, peppers, cheese, salt and jalapeno to taste. Cook covered on low heat 30 minutes, stirring occasionally. Mix crawfish mixture with noodles thoroughly. Put into 2 to 3 quart greased casseroles and sprinkle with Parmesan cheese. Bake 350F for 15 or 20 minutes until heated thoroughly.
