Crawfish Foo Young

3 cups finely shredded cabbage
1/2 cup finely chopped onions
2 cups cooked rice
2 cups (8 oz) crawfish tails, chopped
1-1/2 tsp salt
1/4 tsp ground black pepper
2 tbs soy sauce
8 eggs, beaten

1-1/2 cups chicken broth
1 tbs cornstarch
1 tbs soy sauce
Salt and ground black pepper to taste

Combine cabbage, onions, rice, and crawfish. Add salt, pepper and soy sauce to beaten eggs. Stir into cabbage mixture. For each omelet pour 1/4 cup mixture on a lightly greased griddle. Cook until brown on each side, turning only once. Serve with Sauce.

Blend chicken broth and cornstarch. Cook until thickened. Stir in soy sauce and seasonings.

Makes 6 servings
