Crawfish Mornay

1/2 lb margarine
2 bunches green onions, chopped
1 cup parsley, chopped
2 tbs flour
2 pints Half and Half cream
1 lb Swiss cheese
1/2 cup sherry wine to taste
Red pepper to taste
2 bay leaves
Dash herb seasoning
Dash thyme
2 lb crawfish
Noodles, cooked

Melt margarine and saute green onions and parsley. Blend in flour, add cream and cheese until melted. When cheese is melted, add wine, red pepper, salt, bay leaves, herb seasoning and thyme. Fold in crawfish and cook very low for 15 minutes. Serve over noodles.

Serves 6 to 8 people.
