Shrimp Victoria

1 lb raw, peeled, and deveined shrimp, fresh or frozen
1/4 cup finely chopped onion
1/4 cup margarine or butter
One 6 oz can sliced mushrooms, drained
1 tbs all-purpose flour
1/4 tsp salt
Dash cayenne pepper
1 cup sour cream
1-1/2 cups cooked rice

Thaw shrimp, if frozen, in a 10-inch frypan. Saute shrimp and onion in margarine over medium heat for 3 to 5 minutes or until shrimp are opaque. Add mushrooms and heat. Sprinkle in flour, salt and pepper; reduce heat. Stir in sour cream and cook gently for 8 to 10 minutes, not allowing mixture to boil. Serve over rice.

Makes 6 servings.
