Tomato Salsa with Angel Hair Pasta

1 shallot, minced
1 clove elephant garlic, minced
2 tomatoes, peeled, seeded, diced
2 fresh jalapenos, seeded, diced
2 tbsp. chopped parsley
3 tbsp. chopped fresh cilantro
1/2 cup extra virgin olive oil
16 oz. fresh pasta

Combine first 6 ingredients in serving bowl. Boil pasta according to package instructions. Heat 1/2 cup olive oil in small saucepan. Pour oil into tomato salsa mixture. Drain pasta; toss into salsa mixture. Taste for seasoning.
