Combine water, 2 tablespoons of the butter and contents of rice and seasoning packets in medium saucepan. Bring to a boil. Cover tightly and simmer 8 minutes, stirring occasionally. While rice simmers, cut center of onion into four 1/2 inch thick slices; peel off skin. Place on 15x10 inch jelly roll pan. Melt remaining 2 tablespoons butter; brush half over onions. Broil 5 to 6 inches from heat source 5 minutes; turn carefully with spatula and brush with remaining butter. Broil 5 minutes or until dark golden brown. Remove rice from heat. Let stand covered 5 minutes, or until desired consistency. With spatula, place onion rafts on serving plate. Mound rice onto rafts; sprinkle with tomato.
Makes 4 servings
NOTE:
If outer skin of onion curls up, discard before turning.
