Cauliflower Rice Au Gratin in Tomato Cups

1-2/3 cup water
2 tbsp. butter or margarine
4 sm. green onions with tops, cut into 1 inch pieces (about 1/2 cup)
1 pkg. (4.7 oz.) Uncle Ben's Country Inn Brand Rice Dishes 10 minute recipes cauliflower au gratin
4 lg. firm ripe tomatoes
Salt and black pepper

Combine water, butter, onions and contents of rice and seasoning packets in medium saucepan. Bring to a boil. Cover tightly and simmer 8 minutes, stirring occasionally. While rice simmers, cut 1/2 inch slice off tops of tomatoes; scoop out pulp and seeds. Place in shallow baking dish. Bake in 400 degree oven just to warm and soften, about 5 to 7 minutes. While tomatoes are baking, coarsely chop tomato slices; set aside. Remove rice from heat. Let stand covered 5 minutes, or until desired consistency. Remove tomatoes from oven; season insides with salt and pepper, to taste. Stir chopped tomato into rice. Fill tomatoes with rice mixture.
