Summer Squash 2

Two 2-lb. summer squash, yellow
1/2 cup margarine
3/4 cup chopped onions
15 Ritz crackers, crumbled
2 eggs, beaten
salt and pepper
1/2 tsp. Louisiana hot sauce
1 cup grated pasteurized process American cheese
1-1/2 cup Ritz cracker crumbs
1/2 cup margarine, melted

Slice squash and cook until tender. Saute onion in 1/2 cup margarine and mix with squash. Add crumbled crackers, eggs, seasonings and cheese. Place mixture in a two-quart casserole. Combine melted margarine with cracker crumbs. Sprinkle over squash mixture. Bake at 350F until bubbling hot.
