Vegetable Rice Toss

3 cup hot cooked rice, cooked in chicken broth
1 can (4 oz.) sliced mushrooms, drained
1/2 cup cooked green peas
1 tbsp. butter or margarine, melted
1 tsp. onion powder
Salt and ground black pepper to taste
1 tbsp. chopped parsley

Combine all ingredients except parsley. Heat until vegetables are hot, 3 or 4 minutes. Toss lightly. Spoon into serving dish; garnish with parsley. Sprinkle with Parmesan cheese, if desired.

Microwave instructions:
Combine all ingredients except parsley in a 1-1/2 to 2 quart microwavable baking dish. Cover and cook on High (maximum power) 5 minutes, stirring after 2 minutes. Garnish with parsley.
