Vegetable Latkes

2 medium zucchin1 or 4 medium carrots
1 egg
3 tablespoons dry curd cottage cheese
3 tablespoons matzo meal
1/4 teaspoon salt
1/8 teaspoon pepper
Cooking oil
Dairy sour cream, optional

Place zucchini or carrots in a steamer basket. Cover and steam over boiling water until very tender. Allow 8 minutes for zucchini and 15 minutes for carrots. In medium bowl, beat egg, stir in zucchini or carrots, cottage cheese, matzo meal, salt and pepper. Heat slightly oiled skillet over medium heat. Add vegetable mixture, a rounded tablespoon at a time, spreading each patty to a 2-1/2 inch circle. Cook approximately 4 minutes or until golden brown, turning once. If desired, serve with sour cream.

Makes 10 latkes (5 side dish servings). Serves 5.
