Cajun Rice Delight

1 cup rice water
2-1/2 cups milk
6 tablespoons sugar
1 tablespoon margarine
1/4 teaspoon almond extract
3 egg yolks, slightly beaten
2 cups Hour
1/2 cup margarine
1 small egg
1 tablespoon sugar
4 or 5 tablespoons cold water
16-ounce can applesauce
1/2 cup thinly sliced bananas
1/4 teaspoon almond extract
2 egg whites, beaten stiff

Preheat oven to 400F. Wash rice in cold water, put into saucepan and cover well with water. Bring to a boil, turn off the heat and let stand 5 minutes. Drain in a strainer and rinse by letting cold water run through rice. Return to pan and add milk and sugar. Bring to a boil. Add margarine and extract. Cover pan and simmer over low heat for one-half hour. While rice is cooking, prepare pastry by creaming margarine, sugar and egg. Mix in flour using a fork or pastry blender. Add water gradually, using just enough to make a firm dough. On floured Surface roll out dough. Line a 10 inch pie plate with pastry. Fill the pastry with applesauce mixture by combining in a medium bowl: apple sauce, bananas and almond extract.

Bake at 400F about 20 minutes. When the mixture has finished cooking, fold in egg whites. Spread on applesauce and sprinkle top with sugar. Return to oven with heat reduced to 375F. Cook until top is just browned.

Serves 6-8.
