Oven Stuffed Potatoes

6 baked sweet potatoes
8 ounces crushed pineapple, drained
Zest of 1 orange
1/2 cup brown sugar
3/4 cup miniature marshmallows
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup pecans, chopped
1/4 cup pecans, chopped to sprinkle on top
1 tablespoon butter
1/2 cup coconut
2 tablespoons sour cream
3/4 cup white raisins

Preheat oven to 350F. Remove sweet potatoes from shin and mash thoroughly. Add all ingredients except pecans for topping.

Stuff shin and top with pecans. Bake until marshmallows are melted. This can also be made in a casserole. Potatoes can be baked ahead of time and casserole or stuffed potatoes can be refrigerated or frozen.
