Cajun Potatoes 2

6 large potatoes, peeled and cut into chunks
1/4 cup vegetable oil
1 cup chopped onions
2 cloves garlic, minced
1 cup celery heart, minced
1/2 cup red bell pepper, chopped
1/2 cup onion tops, sliced fine
1/4 cup parsley, minced
2 cups water
Salt and red pepper to taste

Heat oil in a 5 quart heavy pot on medium high heat. Add potatoes and cook about ten minutes. Add onions, celery, bell pepper, salt and pepper. Cook until potatoes are getting tender, adding water to keep mixture from sticking. Stir often. When potatoes are tender add parsley and onion tops. Stir to mix well, adjusting seasonings and adding water so potatoes will have a thick gravy. Serve hot as a side dish.
