Carrot Croquettes

2 cups of carrots (cut, boiled and mashed and well drained)
1 cup flour
1 tsp of baking powder
2 eggs (both yolk and white)
1/2 cup sugar
1 tsp of cinnamon

Mix all ingredients well. Drop by tsp in hot grease till golden brown, turning often. Temperature on candy thermometer should be 350F.

This makes about 72.

(Grease can't be hotter than 350F, because inside of patty won't cook.) When brown put on paper towel. Easy and delicious. It takes 5 minutes for inside to cook.
