Place carrots and 1/4 cup orange juice in a 1 quart casserole. Cover and microwave on HIGH 6-7 minutes, stirring once midway through cooking. Blend cornstarch and nutmeg into 1/2 cup orange juice. Combine spiced orange juice with carrots. Cover and microwave on HIGH 2-1/2 to 3 minutes, or until sauce is thickened. Garnish with parsley.
