Coconut Broiled Louisiana Yams

Three 1 lb cans Louisiana yams, drained and halves
1-1/2 cups shredded coconut
1/4 cup melted butter or margarine
1/2 cup firmly packed brown sugar
1/4 cup heavy cream
1/4 cup red maraschino cherries

Arrange yams in lightly greased shallow 2-qt. casserole. Sprinkle with 1 cup coconut. Combine butter, brown sugar and cream; mix well and pour over yams and coconut. Top with remaining 1/2 cup coconut and cherries. Broil 4 to 5 inches from source of heat for 4 minutes, or until coconut is lightly browned.

Serves 8.
