Corn and Rice Medley

1/8 lb margarine or butter
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup chopped celery
1 cup shallots, chopped
6 strips bacon
1 tbs minced garlic
1 can cream of chicken/mushroom soup
1 can creamed corn
3 cups cooked rice
2 cups grated cheddar choose
Bread crumbs
One 4 oz sliced mushrooms
Season to taste

Melt margarine or butter in 3-quart saucepan. Add onions, bell peppers, celery, shallots and chopped bacon and garlic and cook until wilted. Add soup, corn, rice and cheese. Mix gently and pour in greased 3-quart casserole. Top with seasoned bread crumbs. Bake a 350F for 30 minutes.

Serves 8-10.
