Fried Carrots

1 bunch raw carrots
2 eggs
Cracker meal
1/2 cup cooking oil

Wash and lightly scrape one bunch of raw carrots. Slice the carrots into three or four inch lengths. Beat the eggs in a shallow bowl. In another bowl, empty half a box cracker meal. (Add in more eggs or cracker meal as needed). Dip the sliced raw carrots in the mixture of eggs and then the cracker meal. On a medium to low fire, try the carrots in the cooking oil until tender and brown. Drain on a paper towel.
