Nut-Crowned Molded Yams

Two No. 300 cans Sugary Sam Mashed Yams
1 cup brown sugar (lightly packed), beet or cane
1 tsp cinnamon
1/2 cup sugar (beet or cane)
1/4 cup pineapple or orange juice
1/2 cup sliced nuts
1/4 cup soft butter
2 tbs flour

Spread butter over the ring mold in a thick coat and dust with flour. Distribute nuts over the bottom. Sprinkle with brown sugar. Set in refrigerator. Chill 10 minutes. Mix yams with remaining ingredients. Press carefully into chilled mold. Set in preheated 350F oven for one hour. Let stand 15 minutes before un-molding. Serve while hot filled with peas or other vegetable.

Makes six to eight servings.
