Roasted Garlic Potatoes

1 tbs butter
1 tbs olive oil
4 large red-skinned potatoes, cut into wedges
4 large garlic cloves, sliced
Creole seasoning to taste

In shallow baking pan, heat butter and olive oil in hot oven. Remove pan from oven, stir in potatoes and garlic. Toss to coat. Return to oven and continue baking, stirring occasionally, 25 to 40 minutes, until potatoes are golden and tender. Season to taste with Cajun seasoning or salt and pepper.

Serves 4.
